The Sacred Mountains of Tea!
In Ancient China, the greatest tea of all was called Pu Erh. It is still made today, as a a deluxe, gourmet tea in the form of cakes that gains value and flavor as it ages, like fine wines. At Red Leaf Tea, you can find a few pu erhs for sale at great prices, like the wonderful Xaio Tuo Cha pictured here. The Chinese tea connoisseurs of yore declared that true Pu Erh had to be harvested strictly from the broad-leafed variety of the tea tree, and that these leaves had to be extremely young pekoes, oir buds with two leaves attached. Furthermore, the true pu erh leaves came only from the Six Tea Mountains of Yunan Province, called Bada, Nannuo, Youle, Menghai, Mengsong and Jinghai! Today, that definition has widened to include any hand-processed leaves, harvested early in their growth, from wild trees growing in the forests of Yunan.

A fine compromise! Oolong Tea

Oolong often has a blueish touch in its color!
We find that sometimes we need a break from the simple choice of green or black tea, and that’s when we like to have an oolong. Oolong is usually light in color and body, and it can be counted on to refresh and clear the head. It is processed in an exactly middle form, oxidized in open air for a time much longer than green tea, and much less than black tea. As such, it inherits a little of both worlds. Oolong will not wake you as much as green tea will, and it is not nearly as rosy in flavor as black tea. The Greatest Tea of All: Pu Erh
Pu Erh tea is without a doubt the finest of all teas based on the Camillia Sinsensis tea tree. It is made only from the leaves of a subspecies of Camillia that has larger leaves than the more common strain, and only in China’s Yunan province. Pu erh tea is made in the same way as green tea, up until the final steps of the process. At first, it is allowed to oxidize very briefly in the air, which the tea industry call the fermentation. The tea is then quickly heated. Green tea receives no further treatment, but pu erh tea has just begun its long journey. It is usually pressed into bricks or pellets and allowed to undergo a second oxidation through aging. Oxidization is called fermentation in the tea business, and pu erh is thusly a post-fermented tea. The “post-fermentation” allows the lightly treated leaves to develop a unique earthiness in the flavor, while the usual astringency of tea slowly fades away.
